This was one of the things that got me thinking about the importance and layers of scent.

Kakimoto's sweets have a variety of aromas that catch your eye.
For example, there is a cake called ZEN that I like to eat.
The flavors and textures of coffee, matcha, red bean paste, fresh cream, gyuhi, and nuts are layered and can be felt without mixing.

I hadn't had much experience thinking about the layers of aromas while eating, so
I couldn't put it into words, but since we live nearby, I happened to meet Mr. Kakimoto in front of his shop one day and asked him, "Mr. Kakimoto's sweets have so many different flavors that come to mind after you finish eating them. What is that?"
I remember hearing that.

I remember him telling me that he values ​​the combination of aromas and textures, and that in the case of sweets, he pays attention to the temperature range at which they melt so that the customer can experience the layers of flavor after putting them in their mouth.

Around that time, we started going out for dinner,
The food is sophisticated yet playful, with layers of aroma and texture, and the combination of ingredients is fresh and discoverable, just like the sweets.

I started to think, "I want to make cool food like Mr. Kakimoto!"

I began to be conscious of this.
This was one of the reasons why I started to put into words my sense of what was delicious.
When I feel something is delicious, I try to express it in words.
Sometimes it's the taste, sometimes it's the aroma, sometimes it's the texture.
The idea is to stockpile them, combine them somewhere, and then output them.
